- 1 pound sweet potatoes
- 1 cup all-purpose flour
- ½ teaspoon salt
- Marinara sauce or butter & sage
- Parmesan or burrata cheese
- Olive oil drizzle
- Chopped pistachios or dried oregano
Instructions
- Wash and prick sweet potatoes with a fork, then microwave for 7–10 minutes until tender.
- Cut sweet potatoes in half, scoop out the flesh, and mash until smooth.
- Add flour and salt to the mashed sweet potato and mix to form a soft dough.
- Knead the dough lightly on a floured surface for about 1 minute.
- Divide the dough into 4 portions, roll each into a rope, and cut into small pieces to create gnocchi.
- Optionally roll each piece on a gnocchi board or fork to create ridges.
- Boil salted water and add the gnocchi, cooking until they float to the surface (1–2 minutes).
- Use a slotted spoon to remove the gnocchi and immediately add to your favorite sauce.
Notes
Choose sweet potatoes that are firm and unblemished for the best texture. Don’t overwork the dough to keep the gnocchi light and fluffy.
