Description

This unique pasta salad combines dill pickles and crispy bacon with al dente pasta, creating a refreshing yet satisfying dish perfect for any gathering.


Ingredients

  • 1 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 1/4 cup Pickle Brine
  • 1 tablespoon Yellow Mustard
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Sugar
  • 8 slices Bacon
  • 8 ounces Short Pasta
  • 1 cup Pickles
  • 1 cup Mini Cucumbers
  • 1 cup Mild Cheese
  • 1/2 cup Red Onions
  • 1/4 cup Fresh Dill
  • Salt and Pepper to taste

Instructions

  1. Cook the pasta: In a large pot, boil salted water and cook the short pasta according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
  2. Prepare the bacon: While the pasta cooks, fry the bacon in a skillet over medium heat until crispy. Once cooked, transfer the bacon to a paper towel-lined plate to drain excess grease, then chop into bite-sized pieces.
  3. Make the dressing: In a large mixing bowl, combine mayonnaise, sour cream, pickle brine, yellow mustard, kosher salt, and sugar. Mix well until smooth and creamy.
  4. Combine ingredients: Add the cooked pasta, chopped bacon, pickles, mini cucumbers, cheese, red onions, and fresh dill to the dressing. Gently stir to combine all ingredients and coat evenly.
  5. Season and chill: Taste the salad and adjust seasoning with salt and pepper as needed. Cover the bowl and chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
