- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 medium potatoes, diced
- 1 cup carrots, sliced
- 1 cup frozen pierogi (potato and cheese or your choice)
- 1 cup fresh dill, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup sour cream (optional for serving)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and cook for one additional minute.
- Pour in the vegetable broth and add the diced potatoes and sliced carrots. Bring to a boil, then reduce heat and simmer for 10-15 minutes.
- Add frozen pierogi and cook for another 5-7 minutes until heated through.
- Stir in the chopped dill, salt, and black pepper. Adjust seasoning as needed.
- Serve hot with a dollop of sour cream if desired.
Notes
Use fresh ingredients for best flavor. Customize with different varieties of pierogi or spices to suit your taste.
