Description

A hearty and comforting soup that combines traditional pierogi flavors with a rich broth, fresh dill, and tender vegetables.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 medium potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup frozen pierogi (potato and cheese or your choice)
  • 1 cup fresh dill, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup sour cream (optional for serving)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  2. Stir in the minced garlic and cook for one additional minute.
  3. Pour in the vegetable broth and add the diced potatoes and sliced carrots. Bring to a boil, then reduce heat and simmer for 10-15 minutes.
  4. Add frozen pierogi and cook for another 5-7 minutes until heated through.
  5. Stir in the chopped dill, salt, and black pepper. Adjust seasoning as needed.
  6. Serve hot with a dollop of sour cream if desired.

Notes
