Ingredients

  • 1 pound sausage (Italian or smoked)
  • 2 pounds Yukon Gold or Russet potatoes, diced
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup diced onion
  • 1 can cream of mushroom soup

Instructions

  1. Wash and dice the potatoes into bite-sized pieces.
  2. Slice the sausage into rounds.
  3. In the slow cooker, layer half of the diced potatoes, followed by half of the sausage and a sprinkling of diced onions.
  4. In a bowl, mix cream of mushroom soup with half of the sharp cheddar cheese and pour it over the layers.
  5. Add the remaining potatoes and sausage, finishing with any leftover onions and cheese.
  6. Cook on low for 6 hours or high for 3 hours until everything is tender, stirring gently before serving.

Notes
