Description

A hearty comfort food featuring layers of sausage, potatoes, and gooey cheese, perfect for cozy dinners and gatherings.


Ingredients

  • 1 pound sausage (Italian or smoked)
  • 2 pounds Yukon Gold or Russet potatoes
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup diced onion
  • 1 can cream of mushroom soup

Instructions

  1. Wash and dice the potatoes into bite-sized pieces for even cooking.
  2. Slice the sausage into rounds.
  3. In the slow cooker, layer half of the diced potatoes followed by half of the sausage and a sprinkle of the diced onions.
  4. Mix the cream of mushroom soup with half of the shredded cheddar cheese and pour this mixture over the layered ingredients.
  5. Add the remaining potatoes and sausage on top, followed by the remaining onions and cheese.
  6. Cook on low for 6 hours or high for 3 hours, until everything is tender and stir gently before serving.

Notes

For a vegan version, substitute sausage with plant-based sausage and use vegan cream of mushroom soup along with dairy-free cheese.
