- 1 pound sausage (Italian or smoked)
- 2 pounds Yukon Gold or Russet potatoes
- 1 cup shredded sharp cheddar cheese
- 1/2 cup diced onion
- 1 can cream of mushroom soup
Instructions
- Wash and dice the potatoes into bite-sized pieces for even cooking.
- Slice the sausage into rounds.
- In the slow cooker, layer half of the diced potatoes followed by half of the sausage and a sprinkle of the diced onions.
- Mix the cream of mushroom soup with half of the shredded cheddar cheese and pour this mixture over the layered ingredients.
- Add the remaining potatoes and sausage on top, followed by the remaining onions and cheese.
- Cook on low for 6 hours or high for 3 hours, until everything is tender and stir gently before serving.
Notes
For a vegan version, substitute sausage with plant-based sausage and use vegan cream of mushroom soup along with dairy-free cheese.
