Description

A delightful twist on a Southern classic, this Shrimp & Grits Casserole combines creamy grits with succulent shrimp and a golden cheese topping, ready in just 30 minutes.


Ingredients

  • 4 cups chicken broth
  • 2 cups water
  • 1 cup quick-cooking grits
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 pound raw shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika

Instructions

  1. Preheat your oven to 350°F and grease a 9×13-inch casserole dish.
  2. In a large saucepan, bring the chicken broth and water to a boil. Gradually whisk in the grits and reduce the heat, simmering for 5 minutes, stirring frequently until thickened.
  3. Remove the grits from heat and stir in the heavy cream, butter, 1½ cups of the shredded cheese, salt, and pepper until smooth and creamy.
  4. In a skillet, heat the olive oil over medium heat. Sauté the onion, bell pepper, and garlic until softened.
  5. Add the shrimp, Cajun seasoning, and paprika to the skillet. Cook for 3-4 minutes, until the shrimp are pink and cooked through.
  6. Fold the shrimp mixture into the creamy grits, ensuring the flavors are well combined.
  7. Transfer the mixture to the prepared baking dish and top with the remaining cheese.
  8. Bake for 25-30 minutes until it’s bubbly and the cheese is golden brown.
  9. Allow to cool for 10 minutes before serving.

Notes

Allow casserole to rest for about 10 minutes to firm up before serving. You can experiment with different cheeses for varied flavors.
