- 500 g potatoes, peeled and cubed
- 3 large onions, thinly sliced
- 2 tablespoons vegetable oil
- 1 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 2 tablespoons tomato paste
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
- 1/2 cup water
- 2 tablespoons fresh lemon juice
- 1 tablespoon chopped fresh cilantro, for garnish
Instructions
- Heat the vegetable oil in a large pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds until fragrant.
- Add the sliced onions to the pan and sauté until golden brown and caramelized, about 10-15 minutes.
- Stir in the turmeric powder and coriander powder, and continue to cook for 1 minute.
- Add the cubed potatoes to the pan, tossing until coated with the spices.
- Stir in the tomato paste, salt, and black pepper, mixing everything thoroughly.
- Pour in the water, cover the pan, and reduce heat to low. Let simmer for about 20-25 minutes or until potatoes are tender.
- Once cooked, remove the lid and add lemon juice, stirring to combine.
- Adjust seasoning if necessary, then simmer uncovered for a few minutes to thicken slightly.
- Garnish with chopped cilantro before serving.
Notes
For a spicy version, add green chilies or chili powder. You can also stir in coconut milk for a creamy texture.
