Description

A delightful blend of flavors and textures with sautéed onions and spiced cubed potatoes, this vegetarian curry is comforting, hearty, and simple to prepare.


Ingredients

  • 500 g potatoes, peeled and cubed
  • 3 large onions, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 2 tablespoons tomato paste
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 1/2 cup water
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chopped fresh cilantro, for garnish

Instructions

  1. Heat the vegetable oil in a large pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds until fragrant.
  2. Add the sliced onions to the pan and sauté until golden brown and caramelized, about 10-15 minutes.
  3. Stir in the turmeric powder and coriander powder, and continue to cook for 1 minute.
  4. Add the cubed potatoes to the pan, tossing until coated with the spices.
  5. Stir in the tomato paste, salt, and black pepper, mixing everything thoroughly.
  6. Pour in the water, cover the pan, and reduce heat to low. Let simmer for about 20-25 minutes or until potatoes are tender.
  7. Once cooked, remove the lid and add lemon juice, stirring to combine.
  8. Adjust seasoning if necessary, then simmer uncovered for a few minutes to thicken slightly.
  9. Garnish with chopped cilantro before serving.

Notes

For a spicy version, add green chilies or chili powder. You can also stir in coconut milk for a creamy texture.
