- 500 g potatoes, peeled and cubed
- 3 large onions, thinly sliced
- 2 tablespoons vegetable oil
- 1 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 2 tablespoons tomato paste
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
- 1/2 cup water
- 2 tablespoons fresh lemon juice
- 1 tablespoon chopped fresh cilantro, for garnish
Instructions
- Heat vegetable oil in a large pan over medium heat. Add cumin seeds to sizzle and release their aroma.
- Add sliced onions and sauté until golden brown and caramelized, about 10-15 minutes.
- Stir in turmeric and coriander powder, cooking for another minute.
- Add cubed potatoes, tossing to coat with the onion and spice mixture.
- Mix in tomato paste, salt, and black pepper until well combined.
- Pour in water, cover, and let simmer for 20-25 minutes until potatoes are tender.
- Remove the lid, add lemon juice, stir, and adjust seasoning if desired.
- Garnish with chopped cilantro before serving.
Notes
Use a mix of yellow and red onions for more complex flavor. Adjust spiciness with green chilies or red chili powder.
