Description

A warm and comforting curry made with a blend of two types of onions and fluffy potatoes, enriched with spices for a delightful flavor.


Ingredients

  • 500 g potatoes, peeled and cubed
  • 3 large onions, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 2 tablespoons tomato paste
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 1/2 cup water
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chopped fresh cilantro, for garnish

Instructions

  1. Heat vegetable oil in a large pan over medium heat. Add cumin seeds to sizzle and release their aroma.
  2. Add sliced onions and sauté until golden brown and caramelized, about 10-15 minutes.
  3. Stir in turmeric and coriander powder, cooking for another minute.
  4. Add cubed potatoes, tossing to coat with the onion and spice mixture.
  5. Mix in tomato paste, salt, and black pepper until well combined.
  6. Pour in water, cover, and let simmer for 20-25 minutes until potatoes are tender.
  7. Remove the lid, add lemon juice, stir, and adjust seasoning if desired.
  8. Garnish with chopped cilantro before serving.

Notes

Use a mix of yellow and red onions for more complex flavor. Adjust spiciness with green chilies or red chili powder.
