Ingredients

  • 3 large onions, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 2 tablespoons tomato paste
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 1/2 cup water
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chopped fresh cilantro, for garnish

Instructions

  1. Heat the vegetable oil in a large pan over medium heat. Add the cumin seeds and wait until they start to sizzle.
  2. Next, add the sliced onions and sauté until golden brown (about 10-15 minutes).
  3. Stir in the turmeric powder and coriander powder, cooking for an additional minute.
  4. Add the cubed potatoes and gently toss to coat them with the onion and spices.
  5. Mix in the tomato paste, salt, and black pepper, ensuring everything is evenly distributed.
  6. Pour in the water, cover the pan with a lid, reduce the heat to low, and let the curry simmer for about 20-25 minutes until the potatoes are tender.
  7. Stir in the fresh lemon juice and adjust seasoning if needed. Let it simmer uncovered for a few more minutes.
  8. Garnish with freshly chopped cilantro before serving.

Notes
