- 1/2 cup water
- 2 tablespoons fresh lemon juice
- 1 tablespoon chopped fresh cilantro, for garnish
Instructions
- Heat the vegetable oil in a large pan over medium heat. Add the cumin seeds and wait until they start to sizzle.
- Next, add the sliced onions and sauté until golden brown (about 10-15 minutes).
- Stir in the turmeric powder and coriander powder, cooking for an additional minute.
- Add the cubed potatoes and gently toss to coat them with the onion and spices.
- Mix in the tomato paste, salt, and black pepper, ensuring everything is evenly distributed.
- Pour in the water, cover the pan with a lid, reduce the heat to low, and let the curry simmer for about 20-25 minutes until the potatoes are tender.
- Stir in the fresh lemon juice and adjust seasoning if needed. Let it simmer uncovered for a few more minutes.
- Garnish with freshly chopped cilantro before serving.
