Ingredients

  • 1 glazed ham (about 57 pounds)
  • 1 cup brown sugar
  • 1/2 cup honey
  • 1/4 cup Dijon mustard
  • 1 tablespoon ground cloves
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a saucepan over medium heat, combine the brown sugar, honey, Dijon mustard, and ground cloves. Stir until smooth and bubbly.
  3. Score the surface of the ham in a diamond pattern.
  4. Brush the glaze over the ham and reserve some for basting.
  5. Cover loosely with foil and roast for about 1 hour. Remove foil and baste every 15 minutes until caramelized, about another 30 minutes.
  6. Once the ham reaches 140°F (60°C), let it rest for 15 minutes before slicing and serving.

Notes

Choose bone-in ham for more flavor. Let the ham rest before slicing to retain juices.
