Description

A delightful combination of creamy Brie cheese and sweet-tart raspberry preserves wrapped in golden puff pastry, perfect for any occasion.


Ingredients

  • 1 (8-ounce / 225g) wheel Brie cheese
  • 1 sheet frozen puff pastry, thawed
  • 1/4 cup (60ml) raspberry preserves or jam
  • 1 tbsp fresh rosemary, finely chopped
  • 1 large egg
  • 2 tbsp chopped pecans or walnuts (optional)
  • 1 tbsp honey or maple syrup (optional)
  • Fresh raspberries & rosemary sprig for garnish (optional)
  • Crackers, baguette, or fruit slices for serving (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Unroll thawed puff pastry onto a lightly floured surface. Roll into a 12×12 inch (30×30 cm) square.
  3. Place brie wheel in the center of the pastry. (Optional: slice brie horizontally and stack with filling for better distribution.)
  4. In a bowl, mix raspberry preserves with chopped rosemary. Spoon mixture over the brie, leaving a border. (Optional: Add chopped nuts.)
  5. Fold pastry corners over the brie, pressing seams to seal into a neat package. Trim excess pastry if desired.
  6. In a small bowl, whisk egg with 1 tsp water for egg wash. Transfer wrapped brie (seam-side down) to the baking sheet. Brush pastry generously with egg wash. (Optional: Add decorative pastry cutouts.)
  7. Bake for 20-25 minutes, or until pastry is puffed, golden brown, and crisp.
  8. Let cool for 10 minutes on the baking sheet before transferring or cutting, to prevent oozing.
  9. Transfer to a serving platter. Garnish with honey/maple syrup, fresh raspberries, and a rosemary sprig, if desired.
  10. Serve warm with crackers, baguette slices, or fruit slices.
