- 1 cup cherry tomatoes, halved
- 1 cup corn, canned or frozen
- 1 red bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine black beans, chickpeas, cherry tomatoes, corn, red bell pepper, red onion, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately or store in the fridge for up to a week.
