Description

A vibrant mix of beans, vegetables, and zesty dressing, perfect for a light lunch or side dish.


Ingredients

  • 1 can black beans, rinsed and drained
  • 1 can chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, canned or frozen
  • 1 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine black beans, chickpeas, cherry tomatoes, corn, red bell pepper, red onion, and cilantro.
  2. In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately or store in the fridge for up to a week.
