Description

Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 4 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add the beef cubes and brown them on all sides.
  2. Add the chopped onion and minced garlic to the pot. Sauté until softened, about 3-4 minutes.
  3. Stir in the tomato paste, dried thyme, and rosemary. Cook for another minute.
  4. Pour in the beef broth and bring it to a boil.
  5. Toss in the sliced carrots and diced potatoes.
  6. Reduce the heat to low, cover, and let the stew simmer for 1.5 to 2 hours, or until the beef is tender.
  7. Taste and season with salt and pepper before serving.

Notes

Stew often tastes better the next day. Consider making it ahead of time.
