- 4 cups chopped broccoli
- 1 (10 oz) can cream of chicken soup
- 1 cup mayonnaise
- 1/4 cup melted butter
- 2 large eggs, beaten
- 1/2 medium yellow onion, chopped
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 1/2 cups sharp cheddar cheese
- 1/2 sleeve Ritz crackers, crushed
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a large bowl, combine the cream of chicken soup, mayonnaise, melted butter, beaten eggs, chopped onion, salt, and pepper. Mix until well blended.
- Fold in chopped broccoli and 1 1/2 cups of sharp cheddar cheese until evenly coated.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Sprinkle the crushed Ritz crackers on top of the casserole.
- Bake for 25-30 minutes, or until bubbling and golden brown on top.
- Let the casserole rest for 10-15 minutes before serving.
Notes
Add cooked chicken or ham for extra protein, and feel free to customize the cheese used.
