Description

A delightful and flavorful meal featuring tender chicken with colorful bell peppers, simmered to perfection in a crockpot.

Ingredients

Scale
  • 2 lbs boneless chicken breasts
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 1 packet fajita seasoning
  • 1 cup salsa
  • Tortillas for serving
  • Optional toppings: sour cream, avocado, cheese, cilantro

Instructions

  1. Place the chicken breasts in the slow cooker, laying them out flat to ensure even cooking.
  2. Add the sliced bell peppers, onion, fajita seasoning, and salsa on top of the chicken.
  3. Stir to combine the ingredients gently, ensuring the chicken is coated with the seasoning and salsa.
  4. Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  5. Once cooked, shred the chicken with two forks and mix it back into the vegetables.
  6. Serve warm in tortillas with your choice of toppings.

Notes

For a spicy variation, add sliced jalapeños or use hot salsa. Leftovers can be stored for 3-4 days in an airtight container.
