Description

A simple and delicious crockpot chicken taco recipe that kids will love, perfect for summer meals.


Ingredients

  • 2 pounds chicken breast
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup corn (canned or frozen)
  • 1 cup black beans (canned, rinsed)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Tortillas (small or large)
  • Optional toppings: sour cream, avocado, cilantro, lime wedges

Instructions

  1. Place the chicken breasts in the bottom of your crockpot.
  2. Sprinkle the taco seasoning evenly over the chicken.
  3. Pour the salsa over the chicken, then add corn and black beans on top.
  4. Cover with the lid and cook on low for 360 minutes or on high for 240 minutes.
  5. Once cooked, shred the chicken with two forks inside the crockpot and stir to mix everything.
  6. Before serving, sprinkle shredded cheese on top and let it melt for a few minutes. Serve with tortillas and optional toppings.
