Ingredients

- 1 pound boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup frozen mixed vegetables
- 1 can cream of chicken soup
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Place the boneless chicken breasts at the bottom of the crockpot. Season with salt, pepper, garlic powder, and onion powder.
- Pour the rice over the chicken and stir in the chicken broth.
- Add the cream of chicken soup and the frozen mixed vegetables. Mix until well combined.
- Set the crockpot to low and cook for 6-7 hours or on high for 3-4 hours.
- Once cooked, shred the chicken and stir everything to combine. Garnish with fresh parsley if desired.
