Description

A delightful lemon tart with a perfect balance of tangy and sweet, featuring a smooth lemon curd filling and a buttery, flaky crust.


Ingredients

  • 1 large egg yolk
  • 1 tablespoon heavy cream
  • 1 teaspoon pure vanilla extract
  • 1¼ cups (6 ¼ ounces) all-purpose flour
  • ½ cup confectioners’ sugar
  • ¼ teaspoon kosher salt
  • 8 tablespoons (½ cup or 1 stick) unsalted butter, cut into ¼-inch pieces and chilled
  • ¼ cup lemon zest
  • ½ cup lemon juice (about 4 lemons)
  • 2 large eggs
  • 7 large egg yolks
  • ½ cup honey
  • Salt to taste
  • 4 tablespoons unsalted butter, cut into 4 pieces and chilled
  • 2 tablespoons heavy cream
  • Berries (optional)
  • Confectioners’ sugar (optional)

Instructions

  1. Start by preheating your oven to 350°F (175°C). In a mixing bowl, combine the all-purpose flour, confectioners’ sugar, and kosher salt.
  2. Add the chilled butter pieces into the dry ingredients and use a pastry cutter or your fingers to mix until it resembles coarse crumbs.
  3. Mix in the egg yolk and cream until it forms a dough. Press this mixture into a tart pan evenly across the bottom and up the sides.
  4. Poke a few holes with a fork to prevent bubbly crusts. Bake for about 15 minutes or until it’s lightly golden.
  5. In another bowl, whisk together the lemon zest, lemon juice, eggs, and egg yolks.
  6. Gradually add the honey and a pinch of salt, mixing until well combined.
  7. Once the crust is done, pour this lemon mixture into the hot crust.
  8. Bake for another 10-15 minutes until the filling is set but still slightly wobbly in the center.
  9. Allow it to cool slightly before refrigerating for at least an hour.
  10. Before serving, whip the heavy cream until soft peaks form and fold in the cold butter until creamy.
  11. Spread or dollop this on top of your cooled lemon tart. Garnish with fresh berries and a dusting of confectioners’ sugar if desired.
