Description

A savory mixture of ground beef, potatoes, and fresh vegetables, this Easy Mexican Picadillo is hearty and versatile, perfect for tacos, burritos, or as a standalone dish.

Ingredients

Scale
  • 1 lb ground beef
  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 cup beef broth

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and bell pepper; sauté until softened for about 3-4 minutes.
  3. Stir in the garlic and cook for an additional minute.
  4. Add the ground beef and cook until browned, breaking up the meat for even cooking.
  5. Season with cumin, paprika, salt, and pepper.
  6. Stir in the diced potatoes and cook for about 5 minutes.
  7. Add diced tomatoes and beef broth; bring to a simmer.
  8. Cover and cook for 20 minutes or until the potatoes are tender, stirring occasionally.
  9. Serve warm in tacos, burritos, or over rice.

Notes

Use fresh ingredients for the best flavor. Adjust spices according to your heat preference. Properly cut potatoes ensure even cooking.
