Description

A comforting and effortless one pot meal combining tender chicken thighs and fluffy rice, perfect for family dinners and meal prep.


Ingredients

  • 1 pound chicken thighs (boneless, skinless)
  • 1 cup rice (long grain or white)
  • 2 cups chicken broth
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup frozen peas and carrots
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until the onion is translucent.
  3. Season the chicken thighs with salt, pepper, and paprika, then add to the pot and cook until browned on all sides.
  4. Stir in the rice, chicken broth, and frozen peas and carrots.
  5. Bring to a boil, then reduce the heat, cover, and simmer for about 20-25 minutes or until the rice is cooked and the chicken is tender.
  6. Fluff the rice with a fork, and serve warm.

Notes

For added flavor, consider using herbs de Provence or Italian seasoning. Swap chicken for tofu for a vegetarian version.
