Description

A delightful combination of flavors and textures, these Easy Peanut Noodles are perfect for any meal, served warm or as a refreshing cold noodle salad.


Ingredients

  • 16 oz pasta
  • 1 cup natural peanut butter (unsweetened)
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1/4 cup brown sugar
  • 2 teaspoons chili garlic sauce (more or less to taste)
  • 2 tablespoons fresh lime juice
  • 3 garlic cloves, pressed or grated
  • 1 tablespoon ginger root, grated
  • 3 green onions, sliced
  • 1 tablespoon sesame seeds
  • 1/4 cup salted peanuts, roughly chopped

Instructions

  1. Cook the Pasta: Begin by boiling water in a large pot. Add the pasta and cook according to the package instructions, stirring occasionally to prevent sticking.
  2. Reserve Pasta Water: Before draining the pasta, reserve one cup of pasta water to adjust the sauce consistency later.
  3. Prepare the Peanut Sauce: In a separate bowl, combine the peanut butter, soy sauce, rice vinegar, brown sugar, chili garlic sauce, lime juice, garlic, and ginger. Whisk until smooth, adjust the chili garlic sauce for heat if desired.
  4. Combine Pasta and Sauce: After draining the pasta, return it to the pot and pour in the peanut sauce. Stir well, adding reserved pasta water as needed for desired consistency.
  5. Serve and Garnish: Serve the noodles in bowls, garnished with sliced green onions, sesame seeds, and crushed peanuts.

Notes

For best texture, cook pasta al dente. Leftovers can be stored in the fridge for up to three days; the sauce may thicken upon refrigeration.
