Description

A delightful dish combining coconut, spices, and beans, perfect for any occasion.


Ingredients

Scale
  • 1 cup long-grain white rice
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 2 sprigs fresh thyme
  • 4 scallions, finely sliced
  • 3 cloves garlic, minced
  • 1 tsp allspice powder
  • Salt and pepper to taste
  • 1 cup water or vegetable broth

Instructions

  1. Rinse the rice under cold water until clear.
  2. Chop the scallions and mince the garlic.
  3. In a large pot, combine the coconut milk, water or broth, allspice powder, thyme, garlic, and half of the scallions. Bring to a simmer.
  4. Stir in the rinsed rice and drained kidney beans until combined. Cover the pot.
  5. Reduce heat to low and simmer for 20-25 minutes.
  6. Remove from heat and let sit covered for 5 minutes. Fluff with a fork and garnish with remaining scallions before serving.

Notes

Rinsing rice prevents clumping. Use fresh ingredients for the best flavor.
