Ingredients

  • 4 medium potatoes, peeled and diced
  • 2 cups fresh spinach, washed and roughly chopped

  • 23 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt, to taste
  • ½ cup water
  • Optional: a squeeze of lemon juice for garnish

Instructions

  1. Prepare the Ingredients: Peel and dice the potatoes into bite-sized pieces. Wash and chop the spinach.
  2. Heat the Oil: In a large pan, heat the vegetable oil over medium heat and add the cumin seeds.
  3. Sauté Onions: Add the finely chopped onion and cook until golden brown, about 5-7 minutes.
  4. Add Garlic and Ginger: Stir in the minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
  5. Cook Potatoes: Toss in the diced potatoes and mix well with the onion, garlic, and ginger. Sauté for about 5 minutes.
  6. Spice it Up: Add turmeric, coriander powder, and salt; mix thoroughly.
  7. Add Water: Pour in ½ cup of water, cover, and simmer for about 10 minutes.
  8. Incorporate Spinach: Once the potatoes are nearly tender, add the chopped spinach. Cook for another 5 minutes.
  9. Finish with Garam Masala: Sprinkle garam masala over the curry just before removing from heat.
  10. Serve and Garnish: Optional – squeeze lemon juice over the dish before serving.

Notes

Using fresh spinach is recommended for best flavor. Adjust spices to taste, and consider adding vegetables like peas for added nutrition.
