Description

Soft and chewy cookies made using strawberry cake mix, offering a delightful fruity flavor and vibrant appearance.

Ingredients

Scale
  • 1 (15.25 ounce) box strawberry cake mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract (optional)
  • 1/2 cup powdered sugar (for rolling, optional)
  • 1 cup white chocolate chips (optional)
  • 1/4 cup sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, mix the strawberry cake mix, vegetable oil, and eggs. Add vanilla extract if desired, and blend until combined.
  3. Gently fold in optional white chocolate chips or sprinkles.
  4. If the dough is sticky, chill it in the fridge for 15-30 minutes.
  5. Portion the dough into 1.5-2 tablespoon balls and roll in powdered sugar for a crinkle effect, placing them on baking sheets two inches apart.
  6. Bake cookies for 9-11 minutes or until edges are set and centers are soft.
  7. Cool on the sheets for 5-10 minutes, then transfer to a wire rack to cool completely.
  8. Enjoy warm or at room temperature, and store in an airtight container.

Notes

For best results, do not overmix and use room temperature eggs. Experiment with various mix-ins for added flavor.
