A quick and customizable Easy Taco Rice Bowl recipe made with seasoned meat, fresh veggies, rice, and bold toppings. Perfect for weeknights or meal prep.
Ingredients
2 cups cooked white or brown rice
1 lb ground beef or turkey
1 packet taco seasoning
1 cup black beans
1 cup corn (drained)
1 cup chopped lettuce
½ cup shredded cheddar cheese
½ avocado, sliced
½ cup salsa
¼ cup sour cream or Greek yogurt
Lime wedges, cilantro for garnish
Instructions
1. Cook rice according to package directions and set aside.
2. Brown the ground meat in a skillet over medium heat. Drain fat and add taco seasoning with ¼ cup water. Simmer for 5 minutes.
3. Warm black beans and corn in a separate pan or microwave.
4. In serving bowls, layer rice as the base.
5. Top with taco meat, beans, and corn.
6. Add lettuce, cheese, avocado, and salsa.
7. Drizzle with sour cream or Greek yogurt.
8. Garnish with lime wedges and chopped cilantro.
9. Serve immediately or store components separately for meal prep.
