A delightful plant-based dish featuring marinated tofu skewers served with fresh pita and vegan tzatziki, perfect for weeknight meals.

- 1 block Super Firm Tofu (vacuum-sealed for best results)
- 1/2 cup Vegan Yogurt (Unsweetened) (or cashew cream/coconut yogurt)
- 2 tablespoons Dijon Mustard (or any mustard)
- 2 tablespoons Agave (or Sugar, Syrup) (or maple syrup/brown sugar)
- 2 tablespoons Lemon Juice & Zest (or lime juice)
- 3 tablespoons Olive Oil (or Neutral Flavored Oil, like avocado oil)
- 3 tablespoons Soy Sauce (or tamari for gluten-free)
- 2 cloves Minced Garlic (or garlic powder)
- 2 tablespoons Nutritional Yeast (or vegan parmesan)
- 1 teaspoon Smoked Paprika
- 1 teaspoon Onion Powder
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Thyme
- 4 slices Pita Bread (whole wheat or gluten-free options)
- 1 cup Vegan Tzatziki (for serving)
Instructions
- Press the tofu by wrapping it in a kitchen towel and placing a heavy object on top for about 15 minutes.
- In a bowl, mix vegan yogurt, Dijon mustard, agave, lemon juice and zest, olive oil, soy sauce, minced garlic, nutritional yeast, smoked paprika, onion powder, oregano, and thyme to make the marinade.
- Cut the pressed tofu into 1-inch cubes and toss it in the marinade. Let it sit for at least 20 minutes or ideally overnight in the fridge.
- Thread the marinated tofu onto skewers. Preheat your grill or oven to medium heat and cook skewers for about 10-15 minutes on each side until golden brown.
- Warm the pita bread and serve the tofu souvlaki with vegan tzatziki on the side, garnished with fresh veggies or herbs as desired.
Notes
For the best flavor, marinate tofu overnight. Use super firm tofu for better texture.
