Ingredients

  • 2 carrots, chopped
  • 2 potatoes, diced
  • 1 cup green beans, trimmed and cut
  • 1 cup peas
  • 2 tomatoes, diced
  • 4 cups vegetable broth
  • 1 teaspoon dried herbs (thyme, basil, or oregano)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped carrots, diced potatoes, green beans, and tomatoes.
