- 1 box (18 oz) yellow cake mix
- 3 eggs
- â…“ cup vegetable oil
- 1 â…“ cups water
- 1 can (14 oz) crushed pineapple in syrup
- 1 cup granulated sugar
- 1 package (8 oz) cream cheese
- 1 box (16 oz) powdered sugar (you’ll use about half, more if needed)
- 12 oz shredded semi-sweet coconut
- Chopped pecans (optional, for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Prepare the cake mix according to the package instructions and pour the batter into the prepared pan. Bake for 25 to 30 minutes, until a toothpick comes out clean.
- While the cake is baking, combine the crushed pineapple (with its syrup) and granulated sugar in a small saucepan. Simmer over medium heat until the sugar dissolves and the mixture thickens slightly.
- Melt the cream cheese with half of the powdered sugar in another saucepan over low heat until smooth, adding more powdered sugar if needed.
- Remove the cake from the oven and poke holes all over the top. Pour the warm pineapple mixture evenly over the warm cake.
- Drizzle the cream cheese icing over the pineapple layer and sprinkle with shredded coconut and optional chopped pecans.
- Allow the cake to cool completely before slicing and serving.

Make sure ingredients are at room temperature for better blending. Allow the cake to cool before icing to maintain structure.
