- 2 cups cooked shredded chicken
- 1 cup shredded white cheddar cheese
- 1 medium Granny Smith apple, diced
- 1 can (15 ounce) white beans, drained and rinsed
- 4 cups low-sodium chicken broth
- 1 medium onion, chopped
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat a drizzle of olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
- Stir in shredded chicken, diced apple, white beans, chili powder, cumin, garlic powder, salt, and black pepper.
- Pour in the chicken broth and let the chili simmer for 20 minutes.
- Turn off the heat and stir in the shredded cheese until fully melted.
- Ladle into bowls and serve hot, garnished with desired toppings.
Notes
For added flavor, use rotisserie chicken. Adjust spices to your preference. You can substitute white beans with black beans or cannellini beans.
