- 1 lb shrimp, peeled and deveined
- 1 cup cooked rice
- 1 cup bell peppers, diced
- 1 cup corn, drained
- 1/2 cup black beans, rinsed and drained
- 1/4 cup red onion, diced
- 1 avocado, diced
- 1 lime, juiced
- 2 tbsp olive oil
- 1 tbsp taco seasoning
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add shrimp and taco seasoning; cook until shrimp are pink and cooked through, about 3-4 minutes.
- In a large bowl, combine cooked rice, bell peppers, corn, black beans, and red onion.
- Add cooked shrimp and lime juice; toss to combine.
- Serve in bowls topped with avocado and cilantro.
Notes
For best results, use fresh shrimp. Customize taco seasoning to your taste. Leftover rice works best for this recipe.
