Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup cooked rice
  • 1 cup bell peppers, diced
  • 1 cup corn, drained
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup red onion, diced
  • 1 avocado, diced
  • 1 lime, juiced
  • 2 tbsp olive oil
  • 1 tbsp taco seasoning
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add shrimp and taco seasoning; cook until shrimp are pink and cooked through, about 3-4 minutes.
  3. In a large bowl, combine cooked rice, bell peppers, corn, black beans, and red onion.
  4. Add cooked shrimp and lime juice; toss to combine.
  5. Serve in bowls topped with avocado and cilantro.

Notes

For best results, use fresh shrimp. Customize taco seasoning to your taste. Leftover rice works best for this recipe.
