Description

A heartwarming Finnish Salmon Soup (Lohikeitto) that’s creamy, rich, and full of flavor, perfect for cozy dinners or fulfilling lunches.


Ingredients

Scale
  • 1 lb salmon fillets
  • 2 cups vegetable or fish stock
  • 1 cup creme fraiche
  • 2 carrots, sliced
  • 1 leek, sliced
  • 2 medium potatoes, diced
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine the stock, sliced carrots, leeks, and diced potatoes. Bring to a boil, then reduce heat to a simmer. Cook for about 10 minutes until tender.
  2. Gently add the salmon fillets to the pot and cook for another 5 minutes until they flake easily.
  3. Stir in the creme fraiche and fresh dill, seasoning with salt and pepper to taste.
  4. Serve warm in bowls, garnished with extra dill if desired.
