A heartwarming Finnish Salmon Soup (Lohikeitto) that’s creamy, rich, and full of flavor, perfect for cozy dinners or fulfilling lunches.
Ingredients

- 1 lb salmon fillets
- 2 cups vegetable or fish stock
- 1 cup creme fraiche
- 2 carrots, sliced
- 1 leek, sliced
- 2 medium potatoes, diced
- 1/4 cup fresh dill, chopped
- Salt and pepper to taste
Instructions
- In a large pot, combine the stock, sliced carrots, leeks, and diced potatoes. Bring to a boil, then reduce heat to a simmer. Cook for about 10 minutes until tender.
- Gently add the salmon fillets to the pot and cook for another 5 minutes until they flake easily.
- Stir in the creme fraiche and fresh dill, seasoning with salt and pepper to taste.
- Serve warm in bowls, garnished with extra dill if desired.
Notes
Use fresh salmon for best results. Adjust seasoning gradually and consider using homemade or low-sodium stock for a flavorful broth.
