Description

Fluffy and flavorful egg bites packed with protein, perfect for breakfast or a quick snack.


Ingredients

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup diced vegetables (spinach, bell peppers, mushrooms)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Grease a silicone muffin tin with cooking spray.
  3. In a medium bowl, whisk together the eggs, cottage cheese, salt, and pepper until smooth.
  4. Fold in the shredded cheese and diced vegetables.
  5. Pour the mixture into the muffin cups, filling them about 3/4 full.
  6. Bake for 20-25 minutes until the edges are set and the tops are slightly puffed.
  7. Let cool for 5 minutes before removing from the tin.
