Ingredients

- 6 large eggs
- 1/2 cup cottage cheese
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup diced vegetables (spinach, bell peppers, mushrooms)
- Salt and pepper to taste
- Cooking spray or oil for greasing
Instructions
- Preheat your oven to 325°F (160°C).
- Grease a silicone muffin tin with cooking spray.
- In a medium bowl, whisk together the eggs, cottage cheese, salt, and pepper until smooth.
- Fold in the shredded cheese and diced vegetables.
- Pour the mixture into the muffin cups, filling them about 3/4 full.
- Bake for 20-25 minutes until the edges are set and the tops are slightly puffed.
- Let cool for 5 minutes before removing from the tin.
