Description

A comforting casserole featuring orzo pasta, caramelized onions, shredded chicken, and a creamy Gruyère cheese topping, perfect for cozy dinners or gatherings.


Ingredients

  • 2 cups orzo pasta
  • 2 tablespoons olive oil
  • 4 medium onions, sliced
  • 2 cloves garlic, minced
  • 2 cups cooked chicken, shredded
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup Gruyère cheese, grated
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized, about 15-20 minutes. Stir in the minced garlic and cook for another minute.
  3. In a large bowl, combine the cooked orzo, caramelized onions, shredded chicken, chicken broth, and heavy cream. Season with salt and pepper.
  4. Transfer the mixture to a greased baking dish and top generously with Gruyère cheese.
  5. Bake for 25-30 minutes or until bubbly and golden on top.
  6. Let cool slightly before serving and garnish with fresh thyme.

Notes

For a vegan version, replace chicken with chickpeas, use vegetable broth, and omit cream. This dish can also be made gluten-free by swapping in gluten-free pasta.
