- 2 cups orzo pasta
- 2 tablespoons olive oil
- 4 medium onions, sliced
- 2 cloves garlic, minced
- 2 cups cooked chicken, shredded
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup Gruyère cheese, grated
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized, about 15-20 minutes. Stir in the minced garlic and cook for another minute.
- In a large bowl, combine the cooked orzo, caramelized onions, shredded chicken, chicken broth, and heavy cream. Season with salt and pepper.
- Transfer the mixture to a greased baking dish and top generously with Gruyère cheese.
- Bake for 25-30 minutes or until bubbly and golden on top.
- Let cool slightly before serving and garnish with fresh thyme.
Notes
For a vegan version, replace chicken with chickpeas, use vegetable broth, and omit cream. This dish can also be made gluten-free by swapping in gluten-free pasta.
