Description

A delightful twist on classic French onion soup, this pasta dish combines tender noodles with rich broth, caramelized onions, and melted Gruyère cheese for ultimate comfort.


Ingredients

  • 12 oz wide pasta (e.g., pappardelle)
  • 3 large yellow onions, thinly sliced
  • 4 cups low-sodium beef broth
  • 1 cup shredded Gruyère cheese
  • 2 tbsp unsalted butter
  • 2 tsp fresh thyme (or 1 tsp dried thyme)
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the sliced onions along with a pinch of salt. Cook for about 20-25 minutes until they turn golden brown and sweet, stirring occasionally.
  2. Pour in the beef broth and add thyme. Let the mixture simmer for an additional 10 minutes.
  3. In a separate pot, bring salted water to a boil and cook pasta according to package instructions until al dente. Reserve a cup of pasta water before draining.
  4. Toss the cooked pasta with the onion-broth mixture, adding reserved pasta water as needed for desired texture.
  5. Transfer to an oven-safe dish, sprinkle Gruyère on top, and broil for 3-5 minutes until cheese is bubbling and golden brown.

Notes

For a vegetarian version, swap beef broth for vegetable broth and use plant-based cheese.
