Description

A comforting twist on classic French onion soup, this pasta dish combines caramelized onions, savory beef broth, and creamy Gruyรจre cheese.


Ingredients

  • 12 oz wide pasta (e.g., pappardelle)
  • 3 large yellow onions, thinly sliced
  • 4 cups low-sodium beef broth
  • 1 cup shredded Gruyรจre cheese
  • 2 tbsp unsalted butter
  • 2 tsp fresh thyme (or 1 tsp dried thyme)
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the sliced onions and a pinch of salt. Cook for about 20-25 minutes, stirring occasionally, until the onions are golden brown and soft.
  2. Once the onions are perfectly caramelized, pour in the low-sodium beef broth and thyme. Let it simmer for an additional 10 minutes.
  3. Boil salted water in a separate pot and cook the pasta according to package instructions until al dente. Reserve some pasta water before draining.
  4. Mix the cooked pasta with the onion-broth mixture in the large pot. Toss until well-combined and add reserved pasta water gradually if needed for a creamy sauce.
  5. Transfer the mixture to an oven-safe dish, top with the shredded Gruyรจre cheese, and broil for 3-5 minutes until the cheese is golden and bubbly.

Notes

Allow the dish to sit for a few minutes before serving for better flavor melding. For added flavor, consider mixing in sautรฉed mushrooms or leafy greens.
