Instructions
- Start by melting the butter in a large pot over medium heat. Add the thinly sliced onions and a pinch of salt, stirring occasionally for 20-25 minutes until caramelized and golden brown.
- Pour in the beef broth and add thyme, letting it simmer for another 10 minutes.
- In a separate pot, bring salted water to a boil and cook the pasta until al dente, reserving about a cup of pasta water before draining.
- Toss the cooked pasta into the onion and broth mixture, adding reserved pasta water gradually to achieve the desired consistency.
- Transfer the mixture to an oven-safe dish, top with Gruyère cheese, and broil for 3-5 minutes until the cheese is bubbling and golden.
