- 2 cups Cucumber, sliced
- 1.5 cups Cherry or grape tomatoes, halved
- 1 small Red onion, thinly sliced
- 1/4 cup Apple cider vinegar
- 2 tbsp Olive oil
- 1 tbsp Granulated sugar or honey
- 1 tsp Salt
- 1/4 tsp Black pepper
- 1/2 tsp Dried oregano or Italian seasoning
- 2 tbsp Fresh parsley or dill, chopped
Instructions
- In a large bowl, mix the sliced cucumbers, halved cherry tomatoes, and thinly sliced red onion.
- In a separate bowl, whisk together the apple cider vinegar, olive oil, sugar (or honey), salt, black pepper, and oregano.
- Pour the dressing over the vegetable mixture and toss gently to coat.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Before serving, sprinkle with fresh parsley or dill.
