Description

Ingredients

  • 2 cups Cucumber, sliced
  • 1.5 cups Cherry or grape tomatoes, halved
  • 1 small Red onion, thinly sliced
  • 1/4 cup Apple cider vinegar
  • 2 tbsp Olive oil
  • 1 tbsp Granulated sugar or honey
  • 1 tsp Salt
  • 1/4 tsp Black pepper
  • 1/2 tsp Dried oregano or Italian seasoning
  • 2 tbsp Fresh parsley or dill, chopped

Instructions

  1. In a large bowl, mix the sliced cucumbers, halved cherry tomatoes, and thinly sliced red onion.
  2. In a separate bowl, whisk together the apple cider vinegar, olive oil, sugar (or honey), salt, black pepper, and oregano.
  3. Pour the dressing over the vegetable mixture and toss gently to coat.
  4. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  5. Before serving, sprinkle with fresh parsley or dill.
