- 4 cups chopped cabbage

- 1 can corn (15 oz)
- 1 packet taco seasoning
- Salt and pepper to taste
- Fritos corn chips
- Shredded cheese (optional)
- Sour cream (optional)
Instructions
- Heat a large skillet over medium heat and add ground beef; cook until browned, draining excess fat.
- Add diced onion and bell pepper to the beef, sautéing until soft, about 3-5 minutes.
- Stir in chopped cabbage and cook down until softened.
- Mix in diced tomatoes, corn, and taco seasoning; simmer for 10-15 minutes, stirring occasionally.
- Taste and season with salt and pepper as desired.
- Scoop onto plates or bowls and top with Fritos, shredded cheese, and sour cream if desired.
Notes
Store leftovers in the fridge for 3-4 days or freeze for up to 3 months. For a vegan option, swap ground beef for lentils.
