Description

Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 4 cups chopped cabbage
  • 1 can diced tomatoes (14.5 oz)
  • 1 can corn (15 oz)
  • 1 packet taco seasoning
  • Salt and pepper to taste
  • Fritos corn chips
  • Shredded cheese (optional)
  • Sour cream (optional)

Instructions

  1. Heat a large skillet over medium heat and add ground beef; cook until browned, draining excess fat.
  2. Add diced onion and bell pepper to the beef, sautéing until soft, about 3-5 minutes.
  3. Stir in chopped cabbage and cook down until softened.
  4. Mix in diced tomatoes, corn, and taco seasoning; simmer for 10-15 minutes, stirring occasionally.
  5. Taste and season with salt and pepper as desired.
  6. Scoop onto plates or bowls and top with Fritos, shredded cheese, and sour cream if desired.

Notes

Store leftovers in the fridge for 3-4 days or freeze for up to 3 months. For a vegan option, swap ground beef for lentils.
