  • 1 tablespoon pure vanilla extract
  • 4 large eggs, room temperature
  • 3/4 cup (120g) rainbow jimmies sprinkles
  • 1 1/2 cups (340g) unsalted butter for frosting, room temperature
  • 6 cups (700g) powdered sugar, sifted
  • 1/2 teaspoon salt for frosting
  • 2 teaspoons pure vanilla extract for frosting
  • 35 tablespoons whole milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Combine the cake flour, granulated sugar, baking powder, baking soda, and salt in a large mixing bowl. Mix well.
  3. Add in the unsalted butter and vegetable oil, mixing on medium speed until light and fluffy.
  4. Gradually mix in the buttermilk, sour cream, vanilla extract, and eggs one at a time, scraping down the bowl as needed.
  5. Fold in the rainbow jimmies sprinkles gently.
  6. Pour the batter evenly into the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Cool for 10 minutes before transferring to wire racks.
  7. For the frosting: Beat the unsalted butter until creamy, then gradually add the sifted powdered sugar and salt, mixing on low speed.
  8. Add in the vanilla extract and enough milk for desired consistency, beating until fluffy.
  9. Once cakes are cooled, spread frosting between layers and cover the whole cake with frosting.
