- 1 pound Baby potatoes (Halved for even cooking)

- 3 cloves Garlic (Minced)
- 1 teaspoon Onion powder
- 1 teaspoon Smoked paprika
- 0.5 teaspoon Dried thyme
- 0.5 teaspoon Dried rosemary
- 0.5 teaspoon Salt (Or to taste)
- 0.25 teaspoon Black pepper
- 0.25 cup Beef broth
- 1 tablespoon Olive oil (For searing the beef)
Instructions
- Gather all your ingredients. Cut the beef into bite-sized pieces and halve the potatoes for even cooking.
- If desired, parboil the potatoes for a few minutes to soften them.
- Heat olive oil in a skillet over medium-high heat and sear the beef bites until browned on all sides.
- In a small bowl, mix melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper to create the garlic butter sauce.
- In the slow cooker, place the potatoes and seared beef, then pour the garlic butter sauce on top, adding beef broth to keep everything moist.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is fork-tender. Let it rest for 10 minutes before serving.
Notes
For added flavor, garnish with fresh herbs before serving. Customize spices to your taste.
