- 1.5 lbs beef chuck, cut into bite-sized pieces
- 4 cloves garlic, minced
- 1/2 cup unsalted butter
- 1 lb baby potatoes, halved
- 1 cup beef broth
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a slow cooker, add the beef chunks, minced garlic, butter, and halved baby potatoes. Ensure they are evenly distributed.
- Pour the beef broth over the ingredients, making sure everything is lightly swimming in it. Season with salt and pepper.
- Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender.
- Serve hot and optionally garnish with fresh parsley.
Notes
For extra flavor, try searing the beef before adding it to the slow cooker.
