Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1.5 lbs baby red potatoes, quartered
  • 1 lb whole carrots, peeled and cut into chunks
  • 6 cloves garlic, minced
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp chopped parsley (optional, for garnish)
  • 1/2 cup chicken broth

Instructions

  1. Toss chicken, potatoes, and carrots into the slow cooker.
  2. In a medium bowl, mix together melted butter, minced garlic, Italian seasoning, salt, black pepper, and chicken broth.
  3. Pour the garlic butter sauce over the chicken and veggies in the slow cooker, stirring gently to coat evenly.
  4. Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours.
  5. Once cooked, garnish with fresh parsley if desired and serve warm.
