Description

Ingredients

  • 6 tablespoons butter
  • 12 oz fresh mushrooms, sliced
  • 3 tablespoons fresh minced garlic
  • 1 cup long-grain white rice
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dried thyme
  • 2 (10-oz) cans beef consommé
  • Fresh chives for garnish (optional)

Instructions

  1. In a large skillet, melt the butter over high heat. Sauté the sliced mushrooms for about 5 minutes until golden brown.
  2. Add the minced garlic, rice, pepper, and thyme to the skillet. Reduce heat to medium and cook while stirring for an additional 5 minutes.
  3. Heat the beef consommé in a medium pan with a lid.
  4. Combine the rice and mushroom mixture with the heated beef consommé, bringing it to a boil. Then reduce the heat to low, cover, and cook for 20 minutes or until the rice is tender.
  5. Fluff the rice with a fork and garnish with fresh chives before serving.

Notes

Pick fresh mushrooms, don’t rush the sautéing process, and experiment with different broths for variations.
