- 4 boneless skinless chicken breasts
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme leaves
- 2 tablespoons butter
- 1 cup chicken broth
- 2 pounds russet potatoes
- ½ cup heavy cream
- 2 tablespoons brown sugar
- 1 tablespoon balsamic vinegar
Instructions
- Pat chicken breasts dry and season with salt and pepper. Rub with garlic, parsley, and thyme mixture. Let rest for 10 minutes.
- Heat olive oil in a skillet and sear chicken for 5-6 minutes on each side until golden brown. Add butter and baste chicken until it reaches 165°F.
- Make sauce by stirring brown sugar and balsamic vinegar in the same skillet. Add chicken broth and scrape browned bits. Simmer until sauce reduces by half.
- Prepare mashed potatoes by boiling potato chunks until fork-tender, then mash with butter and cream. Season to taste.
- Serve chicken on mashed potatoes, drizzle sauce over the top, and garnish with herbs if desired.
Notes
For a lighter version, reduce butter and substitute heavy cream with low-fat yogurt.
