- 4 boneless skinless chicken breasts
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme leaves
- 2 tablespoons butter
- 1 cup chicken broth
- 2 pounds russet potatoes
- ½ cup heavy cream
- 2 tablespoons brown sugar
- 1 tablespoon balsamic vinegar
Instructions
- Pat the chicken breasts dry and season both sides with salt and pepper. Mix garlic, parsley, and thyme; rub over chicken. Let rest for 10 minutes.
- In a skillet, heat olive oil over medium-high. Sear chicken for 5-6 minutes per side, adding butter to baste until fully cooked at 165°F.
- In the same skillet, add brown sugar and balsamic vinegar; stir until dissolved. Add chicken broth, scraping up bits, and simmer until sauce reduces by half.
- Boil peeled and chopped potatoes in salted water until fork-tender (15-20 minutes). Drain and mash with butter and cream. Season with salt and pepper.
- Serve mashed potatoes topped with chicken and drizzle with sauce; garnish with fresh herbs.
Notes
For extra-fluffy mashed potatoes, use a potato ricer. Customize the herbs based on your preference.
