- 4 cloves garlic, minced

- 1 cup chicken broth
- 2 pounds russet potatoes
- ½ cup heavy cream
- 2 tablespoons brown sugar
- 1 tablespoon balsamic vinegar
Instructions
- Pat the chicken breasts dry and season with salt and pepper.
- Combine garlic, parsley, and thyme in a bowl; rub over chicken. Let rest for 10 minutes.
- Heat olive oil in a skillet, sear chicken for 5-6 minutes per side until golden and cooked through, adding butter to baste.
- Remove chicken, tent with foil. In the skillet, add brown sugar and balsamic vinegar, then chicken broth. Simmer until thickened.
- Boil peeled, chunked potatoes until tender, then mash with butter and heavy cream; season with salt and pepper.
- Plate mashed potatoes, top with chicken and drizzle with sauce; garnish with fresh herbs.
