Description

Ingredients

  • 4 boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons butter
  • 1 cup chicken broth
  • 2 pounds russet potatoes
  • ½ cup heavy cream
  • 2 tablespoons brown sugar
  • 1 tablespoon balsamic vinegar

Instructions

  1. Pat the chicken breasts dry and season with salt and pepper.
  2. Combine garlic, parsley, and thyme in a bowl; rub over chicken. Let rest for 10 minutes.
  3. Heat olive oil in a skillet, sear chicken for 5-6 minutes per side until golden and cooked through, adding butter to baste.
  4. Remove chicken, tent with foil. In the skillet, add brown sugar and balsamic vinegar, then chicken broth. Simmer until thickened.
  5. Boil peeled, chunked potatoes until tender, then mash with butter and heavy cream; season with salt and pepper.
  6. Plate mashed potatoes, top with chicken and drizzle with sauce; garnish with fresh herbs.

Notes

For added flavor, baste the chicken during cooking and let it rest after for juiciness.
