- 1 medium head cauliflower, cut into florets
- 8 oz (225g) fresh cremini or button mushrooms, sliced
- 4 garlic cloves, minced
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
- Wash the cauliflower thoroughly and cut it into small florets.
- Heat the olive oil in a large skillet over medium heat. Sauté the minced garlic for about one minute until fragrant.
- Add the sliced mushrooms and cook for approximately five minutes until softened and golden.
- Incorporate the cauliflower florets along with salt and pepper, stirring for about two minutes.
- Cover the skillet, reduce heat to low, and cook for 10 to 15 minutes until cauliflower is tender but not mushy.
- Remove from heat and sprinkle with freshly chopped parsley before serving.
Notes
For added protein, consider topping with a fried egg. Store leftovers in an airtight container in the refrigerator for 3-4 days.
