Description

Ingredients

  • 1 medium head cauliflower, cut into florets
  • 8 oz (225g) fresh cremini or button mushrooms, sliced
  • 4 garlic cloves, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Wash the cauliflower thoroughly and cut it into small florets.
  2. Heat the olive oil in a large skillet over medium heat. Sauté the minced garlic for about one minute until fragrant.
  3. Add the sliced mushrooms and cook for approximately five minutes until softened and golden.
  4. Incorporate the cauliflower florets along with salt and pepper, stirring for about two minutes.
  5. Cover the skillet, reduce heat to low, and cook for 10 to 15 minutes until cauliflower is tender but not mushy.
  6. Remove from heat and sprinkle with freshly chopped parsley before serving.

Notes

For added protein, consider topping with a fried egg. Store leftovers in an airtight container in the refrigerator for 3-4 days.
