Ingredients

- 1 medium head cauliflower, cut into florets
- 8 oz (225g) fresh cremini or button mushrooms, sliced
- 4 garlic cloves, minced
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
- Wash the cauliflower thoroughly and cut it into small florets.
- Heat olive oil in a large skillet over medium heat and sauté minced garlic until fragrant, about 1 minute.
- Add sliced mushrooms to the skillet and cook until softened and golden brown, about 5 minutes.
- Incorporate cauliflower florets into the skillet, adding salt and pepper; stir for about 2 minutes.
- Cover and reduce heat to low, cooking for 10-15 minutes to let the cauliflower steam until tender.
- Remove skillet from heat and sprinkle chopped parsley on top before serving.
Notes
Serve warm on a colorful platter, garnished with parsley. Pairs well with quinoa or brown rice.
