Description

A warm, hearty meal featuring juicy chicken breasts and tender baby potatoes, bursting with garlic and Parmesan flavors, all cooked in a crockpot for convenience.


Ingredients

  • 4 chicken breasts, boneless and skinless
  • 1 pound baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 cup chicken broth
  • 2 tablespoons freshly chopped parsley for garnish
  • Optional: lemon wedges for serving

Instructions

  1. Season the chicken breasts with salt, pepper, garlic powder, oregano, and thyme, ensuring both sides are even coated.
  2. In a skillet over medium-high heat, add olive oil and sear the chicken for about 2-3 minutes per side until golden brown.
  3. Remove the chicken and sauté minced garlic in the same skillet for 1-2 minutes until fragrant.
  4. Layer baby potatoes in the bottom of the crockpot and sprinkle with salt and pepper.
  5. Place seared chicken over potatoes, pour chicken broth and sprinkle Parmesan cheese on top.
  6. Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is fully cooked and potatoes are tender.
  7. About 30 minutes before serving, add fresh spinach to the crockpot.
  8. Garnish with chopped parsley and serve warm with lemon wedges on the side.

Notes

Searing the chicken adds flavor and prevents it from becoming dry. Avoid burning the garlic while sautéing, as it can make the dish bitter.
