- 1 pound Italian sausage, casings removed
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 1 pound cheese tortellini
- 1 cup baby spinach leaves
- 1 cup grated Parmesan cheese
- Salt, to taste
- Pepper, to taste
- Red pepper flakes, optional
- Fresh parsley, chopped, for garnish
Instructions
- In a large skillet over medium heat, add the olive oil. Once hot, add the sausage and break it into small pieces. Cook for about 5-7 minutes until browned and no longer pink. Remove the sausage and set aside.
- Add the diced onion to the skillet and cook for 3-4 minutes until translucent. Add the minced garlic and sauté for another minute.
- Pour in the chicken broth and heavy cream, stirring to combine. Bring to a gently simmer.
- Add the cheese tortellini and cook according to package instructions (about 5-7 minutes). Stir occasionally to prevent sticking.
- Return the sausage to the skillet, add spinach, and stir until wilted. Mix in the grated Parmesan cheese until melted and creamy. Season with salt, pepper, and red pepper flakes if desired.
- Garnish with freshly chopped parsley and serve hot.
Notes
For a lighter version, substitute half and half for heavy cream.
